About Rebecca
A nationally-recognized expert on the role of food in supporting health during cancer treatment, Rebecca has a Masters of Science degree in Health and Nutrition Education, and received her culinary training from New York's Natural Gourmet Institute for Health and Culinary Arts. As a consultant, speaker, teacher and chef, Rebecca works closely with patients, physicians, nurses, and wellness professionals to include the powerful tool of nutrition in their medical arsenal.
Rebecca is the Executive Chef for The Center for Mind-Body Medicine's Food As Medicine and CancerGuides® Professional Training Programs, which attracts the country's top cancer wellness physicians, nurses, social workers, and researchers. She is also visiting chef and nutrition educator at Commonweal's Cancer Help Program in Bolinas, California, which offers intensive self-care programs for cancer patients and their caregivers.
Workshops
Rebecca's hands-on workshops are tailored to attendees, be it a room full of physicians and nutritionists or a corporate meeting teaching employees how to prepare delicious, health-supportive meals. All of Rebecca's workshops engage the senses and involve sensory interaction with food. Just as cooking locks in flavor, learning by playing with food imprints those ideas on the brain, meaning you'll actually remember what you learned when you get home. All trainings are geared to the time and expertise of the participants. Programs range from one-hour trainings to weeklong retreats.
Speaking Engagements
A nationally-recognized speaker, Rebecca is a lecturer at many top academic medical centers, including the University of California/San Francisco's Osher Center for Integrative Medicine, Stanford's Comprehensive Cancer Center, and the Johns Hopkins Medical Institution. In addition to her work as Executive Chef/Guest Lecturer at The Center for Mind-Body Medicine's "Food As Medicine" program, Rebecca consults as a speaker/menu planner for Berkeley HeartLabs. Her talks cover all aspects of cooking and developing kitchen confidence, focusing on how to create delicious, nutritious meals for people dealing with illnesses such as cardiovascular disease and cancer, be they newly-diagnosed, currently in treatment, or survivors at risk for recurrence.
Recipe & Menu Development
Rebecca develops delicious, affordable, nutrition-packed menus for businesses of all sizes. Specifically, she has worked with Berkeley HeartLab to develop cardio protective recipes that are dynamic and deliver maximum flavor while staying consistent with the organization's nutritional guidelines. Recipes were structured for ease of use and culinary interpretation by the company's staff and end users.
